Tomato Soup is the first ever soup I had in my life in a restaurant in Guwahati. I don't remember how old I was at that time but I still remember how much I loved the soup with the chunks of bread in it. And trust me I never have tried making tomato soup in my kitchen till last night. The husband is very good at making any kind of soup and hence I always take a back seat whenever it comes to making soup at home. Last evening I saw the husband came home from work exhausted because of the worst traffic in Mumbai specially because of the ganapati ji's visharjan. So I immediately went into the kitchen to make a hot nice cup of tea with a big piece of cake. That hot cup of tea even could not make him feel refresh. Moreover the rainy weather in Mumbai these days calls for some hot & spicy food for sure. So then I quickly decided to make this hot tomato soup for him and my little girl. Though it was the first time for me, the taste was exactly the same the tomato soup should be. Here's my simple way of making tomato soup. Do try ...
Ingredients:
This recipe is for 3 bowl servings
Tomato: 2 large sized blanched. Peel and roughly chopped
Tomato puree (store bought): 2-3 tbsp. for the extra colour
Salt to taste
Black pepper powder: 1 tsp
Chilli flakes: 1 tsp
Oil: 1 tsp
Onion: 1 small sized finely chopped
Garlic: 5-6 cloves crushed
Corn flour: 2 tsp mix with water to a running like consistency
Cream: 3 tsp (though I avoided the cream)
Croutons: 9 pcs (crouton is nothing but the sautéed or rebaked bread, often cubed and seasoned, that is used to add texture and flavor to salads, as an accompaniment to soups, or eaten as a snack food)
Honey: 2-3 tsp
Method:
Take the chopped blanched tomatoes in a mixer and make a smooth paste and keep aside.
Heat oil in a pan, add the onion and saute till translucent. Add garlic and stir for few seconds. Now add the tomato puree (store bought one) and chilli flakes and mix well. Now you add slowly the pureed mixture of tomato and stir and add 1/2 cup of water. In case you still find it little thicker, do not hesitate to add water. Bring the soup to boil.
Add the corn flour mixed with water to the soup for the thickness and soupy texture. Add honey now and mix well. Strain the soup into a bowl with a strainer.
Now season with salt, black pepper powder and give the soup a nice stir and keep on medium flame for about a minute or so.
Serve hot in soup bowls and now add the croutons (3 pcs per bowl) in the soup , garnish with fresh cream and enjoy !!
